This is is a multipurpose recipe that can be used for both vanilla and chocolate, cupcakes and a great sponge cake.
Very versatile and delicious as well.
Flour 150 gms (replace 25 gms with cocoa for chocolate cake)
Butter 80 gms
Milkmaid 250 gms
Castor sugar 2 tbs
Soda (the types you drink!) 150 gms
Baking powder 1 tsp
Baking soda 3/4 tsp
Vanilla extract 1 tsp
Sift flour, baking powder and baking soda and keep aside. Cream Milkmaid, sugar and butter till well mixed (tip: Use room temp Milkmaid). Add soda and beat for a few secs. Add Vanilla extract. Then slowly little by little keep adding the dry ingredients. Stop when well mixed.
Makes about 15 cupcakes and about 1/2 kg cake.
