I have had banana bread many times and always loved it but have not made it very often. Not many people seem to like it or want it so the opportunity rarely arises. My most regular client asked if I could make some and of course I jumped to the opportunity but decided to give it my own little twist just to make it healthier for her kids.
The recipe was inspired by a friend who gave me the idea to incorporate healthy stuff into the same.
Recipe given below but feel free to add whatever you want to it!
Ingredients
Maida 125 gms
Whole wheat flour 25 gms
Flax seed/ sesame seed 25 gms
Butter - 125 gms
White sugar - 75 gms
Organic brown sugar - 75 gms
Eggs - 2 (for egg less replace with 110 gms dahi)
Bananas - 300 gms
Walnuts - 50 gms
Raisins - 50 gms
Baking powder - 2 tsp
Baking soda - 1/2 tsp
Vanilla - 2 tsp
(makes almost 1 kg)
Method
Soak raisins in hot water or rum for at least 15 mins till plump and juicy. Dry roast the sesame and flax seed till toasty and then grind into a fine powder. Sift together the flours and baking powder and baking soda till well incorporated and then add the ground sesame and flax seed and sift together once more to remove all lumps.
Cream the sugar and butter till fluffy and then add the vanilla and then incorporate eggs/dahi. Then add the mashed banana. Fold in the dry ingredients and towards the end fold in the walnuts and raisins.
Pour into a buttered and floured bread loaf which is preferably lined at the bottom as this could stick to the bottom.
Bake in the oven at 180C for about an hour till a knife comes out clean.
If making for adults pour over the rum used to soak the raisins in and then let it cool in the tin and then un mold and let it cool on a wire rack.
Its great for kids and adults alike!
